Fried Chicken

  • Ingredients
  • 2 whole free-range, organic chickens
  • Vegetable oil of choice, for frying the chicken
  • 6 cups all-purpose flour
  • 5 tablespoons salt
  • 4 tablespoons ground black pepper
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons cayenne pepper
  • 2 cups buttermilk
  • Step 1
  • Cut the whole chickens into 4 breasts, 4 thighs, 4 legs and 4 wings and set aside.
  • Step 2
  • Preheat Pure Cooking Oil OR Naz Cooking Oil, in either a heavy pan on the stove or a deep-fryer, to 325 degrees F.
  • Step 3
  • In a large bowl, combine the flour, salt, black pepper, garlic powder, onion powder and cayenne pepper until thoroughly mixed. Set aside.
  • Step 4
  • Pour the buttermilk into another bowl large enough for the chicken to be immersed in the buttermilk.
  • Step 5
  • Prepare your dredging station. Place your chicken in a bowl. Next to that, your bowl of buttermilk, and next to that, your dry mixture.
  • Step 6
  • Take your breasts, lightly dust them with your flour mixture, then dip them in the buttermilk until they are coated, and then place them in the flour mixture.
  • Step 7
  • Take the breasts that are in the flour mixture and aggressively push the flour mixture into the wet chicken. Make sure that the chicken in very thoroughly coated, or you will not achieve the crust and crunch you are looking for. Gently place the breasts in your hot Pure Cooking Oil OR Naz Cooking Oil.
  • Step 8
  • Next, repeat the dredging steps with your other pieces of chicken in this order: thigh, leg then wing.
  • Step 9
  • When you place the last wing into the fryer, you should have 16 pieces of chicken in the Pure Cooking Oil OR Naz Cooking Oil. Set a timer for 15 minutes.
  • Step 10
  • After 15 minutes, take a probe thermometer and check the temperature of a breast. If it reads 180 degrees F, all of your chicken is done. (Keep in mind that it will continue to cook after it has been removed from the fryer.)
  • Step 11
  • Remove the chicken from the Pure Cooking Oil OR Naz Cooking Oil and let it drain for 5 minutes. Let cool for an additional 10 minutes before serving.

Chicken Biryani

  • Ingredients
  • 1 cup boiled basmati rice
  • 1/2 teaspoon mint leaves
  • salt as required
  • 2 tablespoon refined oil
  • 3 green cardamom ground black pepper
  • 2 clove garlic powder
  • 2 onion powder
  • 1 teaspoon turmeric pepper
  • 1 tablespoon garlic paste
  • 1 cup hung curd
  • 2 tablespoon coriander leaves
  • water as required
  • 1 tablespoon ghee
  • 600 gm chicken
  • 1 tablespoon garam masala powder
  • 1 teaspoon saffron
  • 1 tablespoon bay leaf
  • 1 black cardamom
  • 1 teaspoon cumin seeds
  • 4 green chillies
  • 1 tablespoon ginger paste
  • 1 teaspoon red chilli powder
  • 1/2 tablespoon ginger
  • 2 drops kewra
  • 1 tablespoon rose water
  • Step 1
  • To make this delightful biryani, soak saffron in water to prepare saffron water. Next, mix kewra drops in water and mix well to make kewra water.
  • Step 2
  • In the meanwhile, heat refined Pure Cooking Oil OR Naz Cooking Oil in a deep bottomed pan. Once the Pure Cooking Oil OR Naz Cooking Oil is hot enough. Add cumin seeds, bay leaf, green cardamom, black cardamom, cloves in it, and saute for about a minute. Then, add chopped onion in it and saute until pink. Now, add chicken into it with slit green chillies, turmeric, salt to taste, ginger garlic paste, red chilli powder, and green chilli paste. Mix well all the spices and cook for 2-3 minutes. Then, add hung curd into it
  • Step 3
  • Turn the flame to medium again and add garam masala in it along with ginger julienned, coriander and mint leaves. Add kewra water, rose water and saffron water in it. Cook till the chicken is tender.
  • Step 4
  • Then add 1 cup cooked rice and spread evenly. Then add saffron water and pour ghee over it. Cook for 15-20 minutes with closed lid and garnish with 1 tbsp fried onions and coriander leaves. Serve hot

  • Ingredients
  • 5 pounds russet potatoes
  • Vegetable or peanut oil, for frying
  • Sea salt
  • Step 1
  • Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  • Step 2
  • Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  • Step 3
  • When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  • Step 4
  • Heat a few inches of Pure Cooking Oil OR Naz Cooking Oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  • Step 5
  • Once all the potatoes have been fried at 300 degrees F, turn up the heat until the Pure Cooking Oil OR Naz Cooking Oil reaches 400 degrees F. When the Pure Cooking Oil's OR Naz Cooking Oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the Pure Cooking Oil OR Naz Cooking Oil and drain on paper towels.
  • Step 6
  • Sprinkle with sea salt and dive in!
  • Your tasty French Fries recipe is ready now ....
